Merry Christmas from the Kenadi Jean Weis Foundation!

As we approach the end of 2016, we reflect on everything that has happened over the past year and can't help but be in awe of how much you mean to us. Truly, we could not be what we are now without you and your support. Because of your time, donations and sponsorship, Facebook shares and likes, and overall commitment to the foundation, we are able to continue with our mission "to assist all children with special needs and their families achieve fulfilled lives through support, resources, respite care, volunteerism and advocacy."
So it is with heartfelt thanks and gratitude that we wish you the Very Merriest Christmas and a Happy New Year!

Kenadi’s Karnival & Silent Auction Fundraiser

Thank you to all of our generous friends, supporters and volunteers for contributing to an amazingly successful one-day-only fundraising event on Saturday, June 25, 2016.
We are beyond thrilled to announce that because of you, Kenadi’s Karnival & Silent Auction was able to raise a total of $28,000 towards our million dollar goal for the Kenadi Jean Playground Destination in Spearfish, SD.  We are so fortunate and blessed to live in such a caring and compassionate community that shares our vision of creating a more inclusive world.  It was the grandest birthday party ever and although Kenadi wasn’t with us to blow out the candles, her love was reflected in the faces of all who attended the celebration.
It is with a grateful heart that we thank each and every one of you!
Mark your calendar for Saturday, June 24, 2017 for our next Kenadi’s Karnival & Silent Auction Fundraiser!

Kenadi's Recipe Korner

Peppermint Ice Cream - by Gramma Jean

1/3 cup candy canes, crushed (~3-4 candy canes) + more for garnishing
2 cups heavy cream
1 tsp peppermint extract
½ Tbsp vanilla extract
½ cup sugar
4 egg yolks
1½ cups half-and-half

1. In a medium saucepan, heat the half-and-half over medium-low heat until it just begins to simmer.
While the half-and-half is heating, whisk together the egg yolks and sugar in a medium bowl.
2. Remove the hot half-and-half from the stove and gradually pour it into the egg yolk mixture, whisking constantly as you pour.
3. Return the mixture to the saucepan and heat over medium-low heat, stirring constantly, until the mixture thickens and coats the back of a wooden spoon (~4-5 minutes).
4. Remove the mixture from the stove and pour through a fine mesh strainer into a clean container. (Tip: Use a spoon or spatula to help push the mixture through the strainer.)
5. Add the vanilla extract, peppermint extract and heavy cream to the strained mixture; stir until well combined. Cover mixture with plastic wrap, pressing the plastic directly onto the surface of the mixture. Refrigerate overnight.
6. Pour the ice cream mixture into an ice cream maker and freeze according to the manufacturer’s directions. About 5 minutes before the ice cream is done (while it’s solid, but still soft), add the crushed candy canes.
7. Place the finished ice cream into the freezer to harden for at least 4-6 hours before serving.
Garnish with additional crushed candy canes before serving (optional).
