We ‘re in our 5th year
 of this beautiful journey – since we created “The Spartan Table” – we still can’t believe how fast time is passing by.

Sometimes we feel that it was just like some months since we made our first listings (it was only four -  wild oregano, rosemary, shepherd’s tea and thyme).
Or It was a week ago when we released our first newsletter.

   Many things have changed from those days.

ore products coming up and some ideas materialized while a bunch of others still are in paperwork or first stage of creation. 
We met amazing people and made new friends. We don’t want to tire you, but we must repeat it: Your love and support is the primary factor for us being here today and writing these lines.

But there are some that remain the same:  Our passion for sharing the treasures of our Mythical land and our dream for welcoming you one day in Sparta.
Our “Spartan” Ambassadors aim to create a lifetime bond between You and our homeland.

Therefore, we want to believe that so far, You have at least a general idea about Sparta and us.
The wild herbs and teas, the extra virgin olive oil, our handmade sweets and all the rest ones aim to tease Your mind and drift Your heart into a “trip to Sparta.”


     Making new Friends &
Inviting them to our table

Over the last 18 months, especially when we accepted the challenge of making “the Kerstpakket 2016” for our Dutch Friends, we traveled a lot. Many thousands of miles around our region first and then to other ones.

In small hidden places, in forgotten villages and corners of small cities, we met incredible people with endless passion and love for life and their work. They taught us many new things and showed us new ways of thinking and creating.
They helped us to transform some ideas into new products.
And they introduced to us some of their fantastic products.
Since then, we visited them many times and discussed under long meetings about adding few of them into “the Spartan Table.”
These products meet the highest quality and ethical standards, and we are more than sure that You ‘ll love these as we!
Starting with this letter and during the upcoming months, we ‘ll share our news and our experiences from these meetings, and we ‘ll present You our new friends and their fantastic work.

     "Bringing the Olive oil into ethnic cuisines."

Probably you have noticed especially in the delicatessen or similar stores, some small glass bottles with herbs in oil.
Or you have got one as a wedding favor.
And perhaps you have bought on a trip as a souvenir or a gift, such a bottle from a local market. The first thing that "catches the eye" upon looking at this bottle, is the herb inside the oil.
It's beautiful, isn't it?

This was precisely our thought when we saw some bottles with oregano and thyme many years ago. 
And it was one of the first projects which we tried to create upon starting "The Spartan Table."
But most of the times, things aren't easy as they look.
Actually, "the simple it seems the hardest to make it" is the basic rule.
And the "oil with herbs" issue was even more than this.
We tried every possible solution. Fresh herbs and dried herbs in extra virgin olive oil. Left the samples for weeks and months. We tasted them often. Results weren't bad but also not what we were looking.

Asking "experts" from the olive oil industry seemed to be the only way. But again, after visits and meetings with some of them, we were more confused than ever.
"This is not an extra virgin olive oil," one said (meant about the final product with a herb)
"This can not be made !" another added (meant that such a product can't exist!)
"We don't know how to make it" a third answered.
"Please make some tests at your home and come and tell us the results," the last one asked!

And often, as we were browsing the web, reading for news in the industry, we saw these again and again.
With significant variation in prices, with excellent or straightforward descriptions.
They were out there. "Alive and kicking" as someone would say!

The solution came all in sudden, during one of our trips to a near region. We could write a couple of pages about, but this is a story for another day.
The fact is:   We went away from our region (which is a "cradle of the extra virgin olive oil"),  and away from the majority of professionals and experts who "rule" among the producers.
Found small teams of enthusiasts and hard working people that work with endless passion and professionalism to create exceptional products.
If you can go back to our last newsletter, you 'll notice the same occasion again.  In our "neighborhood" we can't find people to cooperate or even talk about the basics most of the time.
It seems likely to be a common sociological phenomenon that you meet in small societies.
 Mediocrity/moderation and debauchery/apathy dominate every effort which aims at extroversion/openness and progress. 
You have to find the "rare birds" who always makes the difference.
Usually, they are not easy to find and prefer to keep focusing on their art & work. You have to be honest and gain their trust.
Then, everything is possible.*

Back to the "Extra virgin olive oil with herbs"

Such a "rare bird" with many years of experience and still having the same passion of the first day, came into our path.
Some trips and meetings later and our old project came to life!

Dear Friends, we are presenting you, our new product range of "Infused Extra Virgin Olive Oils."

The basic idea is to enrich your cooking adding beautiful flavors and taste while using extra virgin olive oil.
You can also use some of the distinctive flavors (you 'll see below in our recipes) with ethnic dishes (Asian, French, Italian, Mexican cuisine and more).
We gathered recipes from specialists but also from individuals, and we are beginning to share with you at the end of this newsletter and through our next ones.

To celebrate our launch of the "Infused Olive Oil series," we created a  couple of wonderful parcels with some of them:

  "Rosemary infused  extra virgin olive oil"
  "Garlic infused extra virgin olive oil"
  "Orange infused extra virgin olive oil"
and two special products to enrich further our cooking:
 "Pomegranate balsamic vinegar"
 "Fig balsamic vinegar" 
Natural handpicked sea salt from Mani's rocks.
Recipe of the Month - Recipe of Life! 
Use our "Infused extra virgin olive oil" and "balsamic vinegars" created especially for "The Spartan Table"

Our first recipe (featuring our "Rosemary Infused Olive Oil"):
Homemade Rosemary Bread
3 cups All-Purpose Flour
1/2 tsp dry yeast
1 tsp sugar
2 tbsp. "The Spartan Table - Rosemary Infused Olive oil" + 1 tsp for brushing
1 1/2 cups warm water
Sift flour and mix all the ingredients.
 (do not knead) 
Cover the bowl with plastic film and let the dough rest for 3 hours. Line an iron cast pot with parchment paper and put the dough in creating a dutch oven. Bake at 450 F for 35 minutes. Take the bread out and brush "The Spartan Table - Rosemary Infused Olive oil" on top. 
Bake for an additional 5 minutes.

Our second recipe (featuring our "Orange Infused Olive Oil"):
Orange and mozzarella Caprese salad 
1 orange
150 grams Mozzarella 
1 tsp "The Spartan Table - Orange Infused Olive oil"
1 tsp "The Spartan Table - Pomegranate Balsamic vinegar" 
salt and pepper to taste.
Peel and slice orange.
Slice mozzarella. 
Build the salad ( one slice orange, one slice mozzarella). 
Drizzle oil and vinegar on top and season with sea salt and freshly ground black pepper.

Our third recipe (featuring our "Garlic Infused Olive Oil"):
"Greek" potato salad
5 boiled potatoes peeled and boiled
2 green onions
Handful of cherry tomatoes
Sea Salt and pepper to taste
Chopped fresh parsley for garnish (Optional)
1 tbsp. "The Spartan Table  Garlic Infused Olive oil"
1 tbsp. "The Spartan Table Fig Balsamic Vinegar"
1 tbsp. mustard (natural and low-fat way to thicken your dressing).
