Praise the Lard!
You are all in for a treat, because we have finally posted our beautiful organic pastured homestead lard and leaf lard for sale on our online shop. Lard is the nutrient-dense superfood of fats and it's all we cook with here on the ranch. It lives on our counter and is used in almost every meal. We use it for everything: frying eggs, browning meat, stir-frying veggies, roasting potatoes, popping popcorn, frying doughnuts and baking pies and cookies.
What's the difference between 'homestead lard' and 'leaf lard'?
None of our lard is strong-flavoured -- we're not talking bacon fat here! However, you will find that leaf lard is lacking the mild, pleasant pork flavour and aroma of the homestead lard. While our homestead lard is rendered from back fat, leaf lard is rendered only from the hard fat around the kidneys, and has a harder texture and neutral flavour. This is why leaf lard is so prized by pastry chefs - it lends an excellent texture and creaminess to sweet or savoury baked goods without any 'porky' flavour. We use leaf lard 50-50 with butter to make the world's best pie crust!
