Like every animal we raise here at Spray Creek Ranch, our turkeys spend their life outdoors on pasture, and are moved quickly around the farm in a way that spreads their impact, improves the soil, and ensures that they always have lots of fresh forage to eat.  Our turkeys are certified organic and guaranteed delicious.

We will be delivering fresh turkeys to Lillooet, Pemberton, Squamish and Whistler Farmers' Markets the weekend before Thanksgiving (October 11-13).

In the summertime, it is hard to even think about simmering a pot of bone broth on the stovetop for hours, but on days like today, when the sky is grey and the air is wet, nothing sounds better than a big bowl of ramen or a mug of bone broth.  Make your own this fall, and go into winter with a freezer full of nutritious stock to add to all your favourite soups, stir-frys, or to enjoy on its own.  

I like to make my broths by first browning the bones in the oven (try 350 deg. for 30-45min), and then simmering in water with onion and carrots for 8-12 hours.  TIP: don't let your broth come to a boil while the bones are still in the pot - this will make your broth cloudy.  I then strain out the bones and veggies, pour the broth back in the pot and bring to a boil to reduce volume (this saves space in the freezer!).  Once the liquid has cooled, I pour into ziplocks and freeze them flat for optimum freezer storage.
