Love bacon? Love cooking with healthy, organic, local fats? We've got a new product just for you: Jowel bacon in slabs! Slice to your desired thickness and cook as you would breakfast bacon, cube and use as a base for any vegetable dish, or use instead of salt pork for the very best baked beans! For my current favourite summer dish: cut a section of jowel into strips, fry gently until most of the fat is rendered, add lots of zucchini and fennel, cook in the rendered fat until soft, add sliced cherry tomatoes, diced garlic, and fresh basil, turn off the heat, and serve over polenta, pasta, or toast.
