With the summer heat, I like to pull refreshing summer luncheon salad recipes from my recipe box. I hope you enjoy the recipe below for Rigatoni Cucumber Salad. It's the perfect side dish to accompany a light summer sandwich and a refreshing glass of iced tea.
Rigatoni Cucumber Salad
1 box (16 ounces) small rigatoni or ziti
2 tablespoons garlic salt
1 1/2 teaspoon black pepper
1 tablespoon parsley
1 1/4 cup sugar
1 cup vinegar
1 cup vegetable oil
1/2 cup onion (Sliced and steamed a bit)
2 cucumbers (Sliced thin, do not peel)
Cook rigatoni following directions on box. Drain. Add cucumbers and onions. Mix oil, vinegar, sugar parsley, pepper and garlic salt in a small bowl, then pour over rigatoni mixture. Garnish each serving with halved salad or cherry tomatoes.
Refrigerate 8 hours before serving.
