You will learn about: • Paleo, Omnivore, Vegetarian and Keto diets • Timing of meals • Fasting • Compressed eating window • The 'non-negotiables'.

Paleo enthusiast Justin Mares was searching for a bone broth to help his brother Nick heal from an ACL tear in 2013. Online offerings were limited: non-organic, shipped with styrofoam, frozen. So he and Nick set out to develop their own recipe, and Kettle & Fire was born. They combine marrow bones with vegetables and filtered water in steel kettles. The mixture is slow-simmered for 24 hours, enough time for the marrow to release collagen and amino acids. The result: an organic, paleo broth in earth-friendly packaging.

Chinese specialty teas

 

Last month tea importer Ned Heagerty of Silk Road Teas joined us Around the Table to present a brief survey of specialty teas from China. We tasted a range of artisan-crafted teas including varieties such as white, green, oolong, black and Pu-erh teas. The teas included small farm, single origin and arguably rare teas not generally found in the US. Ned discussed the province of origin, methods of processing each variety, its taste profile and steeping instructions. Learn more about the teas available here at the market!
