I hope you have enjoyed the stunning weather we have experienced this winter.  I find myself wondering what Spring will bring - not really believing that it's officially here already!  The magnolias and all the blossoms give it away though.  I realise I have not been in touch as often as I hoped.  This year has been incredibly busy for me.  It has been packed full of personal and professional development, truly an amazing journey.  Thank you to those who have been walking this pathway with me.

I came across this beautiful video Everyone Can Meditate and felt compelled to share.  For those who are not meditating already, this is a beautiful (and short) explanation of how to meditate.  It really is quite simple, you'll see...


As some of you will know, my family are wheat- and dairy-free due to severe intolerance.  The health benefits we have gained, since our diagnoses, by returning to mainly real food, have been quite profound.  If you wish to find out more about our journey, just drop me a line.  I'll be happy to answer any questions you may have.  In the meantime, I thought I'd share a couple of recipes with you.  All recipes I share are free from dairy, grains, and refined sugar, and are taste tested and approved by both my husband and our (now) 5 year old! I do hope you enjoy them as much as we do.

Slow Cooker Beef Stroganoff - Wonderful on a cooler evening, and so quick and easy.
Fudgy Choc-orange Truffles (bliss balls) - a wonderful treat.  If you don't remember in time to soak the dates, pouring boiling water over them for about 10 mins works well too (you can trust me on this)
Salt and pepper crackers - fairly quick and easy, and great with all the usual cracker toppings

At this time of the year it is still beneficial to take the time to nurture ourselves.  It is easy to put others before ourselves, but we need to remember that we cannot pour from an empty vessel.  If we are not looking after ourselves, it becomes quite difficult to have the energy to be there for others.
Check out my favourite ways (in no particular order) to relax and take some "me" time here. Once you have recharged your batteries, if you do feel like spring cleaning, there is a recipe on the same page for homemade, non-toxic all purpose cleaner.
