The hospital has its own kitchen managed by the French Chef David Sosson. He chose to equip his kitchen with a CAPITOP, the unique piece of equipment that combines a kettle with a removable mixing arm and a multipurpose bratt pan.
In the restaurant, he proposes an à la carte menu and a caterer menu from 100 to 150 covers. The CAPITOP allows him to prepare these two kinds of menu, thanks to the kettle and the bratt pan. “Indeed, if I have to prepare one hundred meals, I can easily and quickly use my recipes with this compact appliance which takes up little space”, Davis Sosson says.
