Curried Butternut Squash & Chanterelle Soup

I talked about the Earth Element/Late Summer Energy and nourishing the Stomach and Spleen meridians here in my newsletter last week and forgot to include this amazing soup recipe! It is wonderful for Late Summer nourishment. We are so blessed here on Vancouver Island to have abundant chanterelle mushrooms this time of year.

So here's the recipe:
1 boneless, skinless chicken breast, cut into small chunks
1 med buttercup squash, cut in half and roasted at 325 till soft
7 c chicken stock
approx 1 pound chanterelle mushrooms, sliced
1 can coconut milk
2 tsp curry powder
1 1/2 tsp Patak's curry paste
Salt and pepper to taste
Mango chutney

Scoop out butternut squash and blend with approx 2 c of the chicken broth until smooth. Add more chicken broth if it is too thick to blend.

Pour remaining 5 c of chicken broth into a large pot, add the chicken pieces and simmer for 15 min. Add the blended squash/broth mixture and simmer for another 10 min.

Add the sliced chanterelle mushrooms and the coconut milk, stirring to mix well. Add the curry powder, curry paste, and salt and pepper to taste.

Simmer another 15 mins, stirring occasionally. Adjust the seasonings and serve hot with a dallop of mango chutney in the centre of each serving.

Curried Squash and Chanterelle Mushroom Soup

Location:
Two-thirds of the way up from the upper lip to the nose. Press slowly but firmly into your gum and breathe deeply. Do this for a couple of minutes. The effectiveness of this point often increases by pressing it firmly each day over a period of several weeks.
